Multiple gyoza businesses as a localized brand

Hamataro began as a single restaurant specializing in various types of gyoza, a dish for which Hamamatsu is well known in Japan. Since then, we have expanded into multiple gyoza business models, with a highly efficient Gyoza Central Kitchen at the core.

With a strong community-focused strategy, we are building a localized brand that enjoys genuine support from the local population. Leveraging our highly efficient central kitchen equipped with our Automated Gyoza Machines, we actively engage in retail sales, e-commerce, and wholesale, in addition to operating our own restaurants throughout Hamamatsu.

Gyoza has long been loved as a national favorite, making it a product that is less affected by economic downturns and external factors. Additionally, its low cost and high profitability provide a competitive edge in cost performance.

Gyoza Manufacturing (Central Kitchen)

By implementing an automatic gyoza dumpling machine and producing our own dough in-house, we achieve both mass production and cost efficiency. Automation has allowed us to reduce dough costs by 75%, while also minimizing labor requirements and waste.

Restaurant Model (Suburban)

We are expanding our gyoza restaurant model along suburban roadside locations, enhancing our dine-in and takeout offerings to attract local families. By specializing in gyoza, we gain a competitive edge and strong brand identity, allowing us to stand out from the competition.

Gyoza Izakaya Model (Downtown)

We are expanding our gyoza izakaya (bar) model in the downtown area near the station, setting ourselves apart with an extensive variety of gyoza. A key feature of our concept is pairing drinks with stylish, modern presentations of gyoza, appealing to the younger generation while also revitalizing the gyoza drinking culture.

Unmanned Stores (Honor System) 

We have opened several unmanned stores throughout the city. While such shops are commonly found across Japan selling farm produce, we were among the first to introduce unmanned gyoza shops during the pandemic. The benefits of labor savings, reduced operating costs, and low initial investment make this model highly effective.

Tour Flow (Recommended Plan)

Previous night Have dinner and/or drinks at our Gyoza Izakaya (a walking distance from the Hamamatsu Railway Station. Opened from 5:00 PM - 12:00 AM (Closed on Wednesdays))
11 AM ~  Meet up with our staff at "Hamataro Gyoza Center" for the tour of the gyoza restaurant and central kitchen. You can see both the small and the large gyoza machines there.
1 PM ~ Working lunch at our gyoza restaurant to sample different types of gyozas. Lunch is on us!
